Introduction

In this module, we'll see how to answer the most frequent questions from our customers. Whether you work in the store, the restaurant, or at a food fair, this information will help you provide exceptional customer service.

Questions about Freshness

"Is the cheese curds made today?"  

Our cheese curds are made every day, Monday to Sunday.
The best way to check freshness is to taste it - if it "squeaks," it's fresh!

"How long does the cheese keep?"  

Cheese curds: less than 24 hours without refrigeration, 30 days in the refrigerator, but we recommend consuming them on the same day!  

Cheddars: 180 days (about 6 months).

Distinction cheddars: 300 days (about 10 months).

All our products have an expiration date clearly indicated on the packaging.

Questions about Composition

"Do your cheeses contain preservatives?"  

None other than salt. Our cheeses contain only: milk, bacterial culture, salt, microbial enzyme, and sometimes calcium chloride.

"Slab" cheese is a salt-free product, and it only lasts for 24 hours. Eat it on the same day. Perfect for those with salt intolerance.

"Why are some cheddars orange?"  

The color comes from annatto, a natural colorant extracted from a tropical tree. This tradition dates back to the 17th century in England. There is no taste difference between white cheddar and colored cheddar

Questions about Dietary Restrictions

"Are your cheeses gluten-free?" Yes, all our cheeses are naturally gluten-free.

"Do cheeses contain lactose?"  

Cheddars, especially the more aged ones, contain very little lactose as it is transformed during the aging process.

Cheese curds contain lactose. People with a slight intolerance can often eat our aged cheddars, but we recommend consulting a doctor in case of doubt

Questions about Usage

"How to store cheese?"  

Ideally in wax paper or an airtight container in the refrigerator.  

Cheese can be frozen, but it may lose some texture and flavor.

"Which cheese for a specific recipe?"  

Poutine: our fresh cheese curds.

Burgers: To taste, but preferably medium or more.  

For children: Younger cheddars.

Platters: Our distinction cheeses.

Answering customer questions with accuracy and enthusiasm is part of the Saint-Albert experience. Never hesitate to ask for help if you don't know the answer - it's better to check than share incorrect information.
