Module 2: What the Cheese Factory Does

In this module, we'll quickly introduce our main activities at Saint-Albert Cheese Factory.

Our core business is cheese making including:

Daily production of fresh cheese curds;
Making different varieties of cheddar, from mild to extra-sharp;
Our Distinction range of aged cheddar from 2 to 10 years;
Some specialties like mozzarella and cheese twists.

Every day, we process between 120,000 and 160,000 liters of milk from local farms.

Maintenance and Hygiene

Cleanliness is essential in our business:

Complete daily cleaning of all surfaces and equipment;
Clean-in-place (CIP) system for pipes and vats;
Dedicated sanitation team working after production shifts;
Regular microbiological checks of work surfaces.

Quality Control

Quality is at the center of our operations:

Our modern laboratory tests each batch of cheese;
A dedicated quality assurance team checks all production steps;
Regular tastings to ensure consistency of our products.

Distribution

Our cheese travels far:

It’s available in thousands of grocery stores across Canada and used in hundreds of poutine restaurants in Quebec and Ontario  

Our own fleet of trucks for the local region and we have partnerships with distributors to cover the entire country

Mirabel Cheese Factory in St-Jérôme: More than 100 varieties of fine cheeses; Sandwich bar service; and ice cream during the summer.
